Baked Pumpkin Breakfast Bowl

Ingredients

  • 300g pumpkin⁠⠀
  • 1 tsp cinnamon⁠⠀
  • 100g natural coconut yoghurt⁠⠀
  • 25g low fodmap choc vegan protein⁠⠀
  • 60g banana⁠⠀
  • 50g strawberries⁠⠀
  • 5g mixed seeds or nuts (low fodmap)⁠⠀

Preparation

  1. Preheat oven to 200°c and line a tray with baking paper

  2. Chop pumpkin into large pieces, then place on lined tray and sprinkle with cinnamon

  3. Bake for 30 minutes or until soft and golden

  4. Mix protein with coconut yoghurt and chop your fruit

  5. Assemble bowl by topping pumpkin with yoghurt, fruit, seeds and any other toppings of your choice

  6. Serve and enjoy!! ?
