Baked Tofu Vegetable Stir Fry
Ingredients
Baked tofu
- 1 block tofu, drained, pressed, and cut into cubes
- 2 tsp garlic chili sauce
- 1 tbsp tamari
- 1 tbsp nutritional yeast
Stir fry
- mushrooms, sliced
- onion
- broccoli
- bell pepper
- 2 tbsp water
- 1 tbsp sweet chili sauce
- tamari
Preparation
Baked tofu
Drain and press tofu, then cut into cubes
Add tofu cubes to a container with garlic chili sauce, tamari, and nutritional yeast
Seal container and gently shake to coat tofu
Line a baking sheet and spread coated tofu
Bake at 400°F for 20-25 minutes
Stir fry
Heat a pan over medium heat
Add sliced mushrooms and onion
Sauté until onions are translucent
Add broccoli, a splash of tamari, and 2 tablespoons water
Cover pan and cook until broccoli turns bright green, about 4-5 minutes
Add bell pepper, another splash of tamari, and 1 tablespoon sweet chili sauce
Sauté until veggies are coated and most liquid reduces, about 3 minutes
Add baked tofu and coat with sauce
Remove from heat
Serving
Serve with brown jasmine rice
