Baked Tofu Vegetable Stir Fry

Ingredients

Baked tofu

  • 1 block tofu, drained, pressed, and cut into cubes
  • 2 tsp garlic chili sauce
  • 1 tbsp tamari
  • 1 tbsp nutritional yeast

Stir fry

  • mushrooms, sliced
  • onion
  • broccoli
  • bell pepper
  • 2 tbsp water
  • 1 tbsp sweet chili sauce
  • tamari

Preparation

Baked tofu

  1. Drain and press tofu, then cut into cubes

  2. Add tofu cubes to a container with garlic chili sauce, tamari, and nutritional yeast

  3. Seal container and gently shake to coat tofu

  4. Line a baking sheet and spread coated tofu

  5. Bake at 400°F for 20-25 minutes

Stir fry

  1. Heat a pan over medium heat

  2. Add sliced mushrooms and onion

  3. Sauté until onions are translucent

  4. Add broccoli, a splash of tamari, and 2 tablespoons water

  5. Cover pan and cook until broccoli turns bright green, about 4-5 minutes

  6. Add bell pepper, another splash of tamari, and 1 tablespoon sweet chili sauce

  7. Sauté until veggies are coated and most liquid reduces, about 3 minutes

  8. Add baked tofu and coat with sauce

  9. Remove from heat

Serving

  1. Serve with brown jasmine rice
