Cake for a Nutritious Breakfast

Ingredients

  • 275 g oats
  • 2 tsp baking powder
  • 1.5 teaspoons ground cinnamon
  • 1/2 teaspoon salt
  • 2 tbsp flaxseeds + water (flax eggs)
  • 300 ml dairy-free milk
  • 2 tbsp coconut oil
  • 1 ripe banana mashed
  • 1 tsp vanilla extract
  • 1tbsp maple or agave syrup / 2 soaked dates (optional)
  • 1/2 cup fresh berries

Preparation

  1. Preheat the oven to 180C/350F while mixing the oats, baking powder, cinnamon, salt, and syrup / dates in a large bowl. Mix the flax eggs, milk, and oil separately and pour this into the dry mixture when done. Pour this into your oven pan, and bake for 35 minutes or until golden
