“Carrot Pesto

Ingredients

  • for this recipe:
  • 165g or 3 small carrots peeled and chopped in big pieces
  • 1 medium onion
  • 3 cloves of garlic
  • 1 or to taste red chilli
  • 100ml olive oil
  • 25g pine nuts
  • 25g cashew nuts
  • 50g parmesan cheese
  • cracked black pepper to taste
  • salt to taste.

Preparation

  1. Heat 1 tbsp olive add in the onion and carrots and sauté for 2-3 minutes

  2. Add in the garlic, cover the pan and steam for just 3-5 minutes

  3. Once it is cooled, add the carrots and all the ingredients in the food processor and blitz it while adding olive oil

  4. Store it in the fridge up to 10 days
