Chia Pudding and Banana Berry Nicecream
Ingredients
Chia pudding
- 1/4 cup chia seeds
- 3/4 cup non-dairy milk
- 1/2 tsp vanilla extract
- Splash of non dairy flavoured coffee creamer (optional) - I love to add a bit of @silk hazelnut flavoured almond creamer
Strawberry banana nicecream
- 1 sliced frozen banana
- 1/2 cup frozen strawberries
- 1/2 cup non-dairy milk
- 1/2 tsp vanilla extract
- 1 tbsp shredded coconut, toasted
Preparation
Mix together the chia pudding ingredients and let set in fridge for a few hours.
When ready to assemble cups, pulse banana, strawberries, milk and vanilla in a blender until ingredients start to come together and continue to blend on high for 20 seconds.
Top it all off with toasted coconut.
Freezing option
You can pour nicecream into a container and place back into freezer to firm up if you prefer a harder nicecream.
