Chickpea Avocado Sandwich

Ingredients

  • 1 (400g) can chickpeas, drained and rinsed
  • 1 ripe avocado, mashed
  • 2 tbsp chopped parsley
  • 4 tbsp chopped red onion
  • 3 tbsp chopped gherkins
  • 1 tsp mustard
  • juice of 1 lemon
  • salt and pepper to taste
  • 8 slices of toasted bread

Preparation

  1. Use gluten-free bread if you’re allergic/intolerant

  2. Mix the chickpeas and avocado in a large bowl and mash the mixture with a potato masher or a fork

  3. Add the parsley, onions, gherkins, mustard, lemon juice and season to taste with salt and pepper

  4. Divide the mixture into four equal portions to make four sandwiches. Top with rocket and an optional drizzle of chilli sauce
