Cocoa Peanut Energy Bites Delight
Ingredients
- 300g pitted dates
- 3 very heaped T peanut butter
- 2 T cocoa powder
- 2 T protein powder
- 3 T peanuts
- About 5 T puffed rice cereal
Chocolate Layer Options
- 1/2 slab dark choc with 1 T coco oil
- 3 T coco oil, 4 T cocoa powder, 2 T honey and drop of vanilla
Preparation
Blitz dates, peanut butter, cocoa & protein powder in food processor.
With a spoon, mix in peanuts and puffed rice cereal.
Press into small tray and freeze for 10 mins.
Make choc layer and pour over the top of the date mixture and freeze for another 20 mins.
Sprinkle with sea salt and coconut flakes and cut into squares.
Store in airtight container in the freezer.
Notes
If not using fresh dates, first soak them in boiling water for 5 mins.
The protein powder is optional.
Swop out the peanut butter and peanuts for any other nut type you like.
