Courgette Cake That Kids Absolutely Love
Ingredients
- 350g courgette, grated
- 2 eggs
- 75g margarine
- 2 tsp yoghurt
- 1 tsp vanilla extract
- 300g plain flour or gluten free blend
- 1 tsp cinnamon
- 1 tsp mixed spice
- 1/4 tsp nutmeg
- 1/2 tsp bicarbonate of soda
- 1/2 tsp baking powder
- 150g sultanas
- 50g sugar
Preparation
Mix all the dry ingredients together. Then add the margarine and egg and mix.
Add the grated courgette and other wet ingredients and mix for 5 minutes.
Pour into a greased loaf tin and bake at 200C/180 fan/Gas 4 for 45-60 minutes. Test with a skewer to see if it is done.
