Courgette Cake That Kids Absolutely Love

Ingredients

  • 350g courgette, grated
  • 2 eggs
  • 75g margarine
  • 2 tsp yoghurt
  • 1 tsp vanilla extract
  • 300g plain flour or gluten free blend
  • 1 tsp cinnamon
  • 1 tsp mixed spice
  • 1/4 tsp nutmeg
  • 1/2 tsp bicarbonate of soda
  • 1/2 tsp baking powder
  • 150g sultanas
  • 50g sugar

Preparation

  1. Mix all the dry ingredients together. Then add the margarine and egg and mix.

  2. Add the grated courgette and other wet ingredients and mix for 5 minutes.

  3. Pour into a greased loaf tin and bake at 200C/180 fan/Gas 4 for 45-60 minutes. Test with a skewer to see if it is done.
