Crispy Asparagus and Sweet Potato Salad
Ingredients
- 2 handfuls of spinach
- drizzle of olive oil
- balsamic vinegar
- cubed sweet potatoes
- oil
- spices
- asparagus
- salt
- pepper
- pickled onions
- chunks of goat cheese
Preparation
Toss 2 handfuls of spinach with a drizzle of olive oil and balsamic vinegar.
Bake cubed sweet potatoes with oil and spices, or use leftovers if available.
Snap off ends from asparagus and pan fry in oil with salt and pepper, stirring often.
Assemble the salad and top with pickled onions and chunks of goat cheese.
Season as needed.
