Fennel Salad with Yogurt Vinaigrette and Unpasteurised Sheep Cheese on Sourdough Bread

Ingredients

  • For the salad I mixed the following
  • 1/2 chopped fresh fennel
  • 1 sliced apple
  • 2 chopped young turnips
  • 1 chopped onion
  • Large handful of walnuts
  • 1/2 cup of chopped chervil
  • Handful of alfalfa sprouts
  • Handful of cress
  • For the dressing
  • 2 Tbs of Greek yogurt
  • Juice from 1/2 lemon
  • 1 Tbs of apple cider vinegar
  • 1 Tbs of raw linseed oil
  • 2 Tbs of cold pressed olive oil
  • 1 tsp of raw honey
  • 1/2 tsp of Dijon mustard

Preparation

  1. When I am in Slovakia I make my own bread with my family and when I am in London, the only bread I eat is @astonsbread sourdough

  2. For this lunch I spread it with some traditional Slovak unpasteurised soft sheep cheese called Bryndza

  3. It is delicious and really nutritious

  4. It is still produced in a traditional way right on the pastures where animal welfare is very important
