Fennel Salad with Yogurt Vinaigrette and Unpasteurised Sheep Cheese on Sourdough Bread
Ingredients
- For the salad I mixed the following
- 1/2 chopped fresh fennel
- 1 sliced apple
- 2 chopped young turnips
- 1 chopped onion
- Large handful of walnuts
- 1/2 cup of chopped chervil
- Handful of alfalfa sprouts
- Handful of cress
- For the dressing
- 2 Tbs of Greek yogurt
- Juice from 1/2 lemon
- 1 Tbs of apple cider vinegar
- 1 Tbs of raw linseed oil
- 2 Tbs of cold pressed olive oil
- 1 tsp of raw honey
- 1/2 tsp of Dijon mustard
Preparation
When I am in Slovakia I make my own bread with my family and when I am in London, the only bread I eat is @astonsbread sourdough
For this lunch I spread it with some traditional Slovak unpasteurised soft sheep cheese called Bryndza
It is delicious and really nutritious
It is still produced in a traditional way right on the pastures where animal welfare is very important
