Fermented Spiced Carrot Cake Overnight Oats
Ingredients
- 50g whole oats
- 1 carrot
- 1/2 ripe banana
- 1 tsp chia seeds
- 1 tsp pumpkin seeds
- 1 tsp sunflower seeds
- 1 tbsp desiccated coconut
- 1 tsp vanilla
- Handful of raisins
- Handful of walnuts
- 3-4 tbsp kefir or coconut yoghurt
- Almond milk
- Blueberries
Spices
- 1 tsp cinnamon
- 1 tsp maca powder
- Optional: pinch of nutmeg, ginger, and turmeric
Preparation
Mash the banana and finely grate the carrot.
Combine all the remaining ingredients except blueberries and spices in a separate bowl.
Add the spices to the mixture.
Stir through the kefir, vanilla, banana, carrot, and enough almond milk to soak the mixture well. Add the blueberries.
Leave to ferment in a warm place for at least 8 hours to allow the flavors to infuse.
Toppings
In the morning, top with coconut yoghurt, optionally add a dash of vanilla to make it taste like icing.
Add banana.
Add blueberries.
Add almond butter.
Add chia pudding.
Add sunflower seeds.
Add an extra sprinkle of cinnamon.
