Fermented & Spiced Carrot Cake Overnight Oats

Ingredients

  • 50g whole @momafoods oats
  • finely grated carrot (i use a whole)
  • 1/2 ripe banana, mashed
  • 1 tsp chia seeds
  • 1 tsp pumpkin seeds
  • 1 tsp sunflower seeds
  • 1 tbsp desiccated coconut
  • 1 tsp vanilla
  • handful of raisins
  • handful of walnuts, chopped
  • 3-4 tbsp kefir (or coconut yoghurt)
  • almond milk
  • blueberries
  • s p i c e s
  • 1 tsp cinnamon
  • 1 tsp @naturya maca powder for a malty flavour
  • optional: pinch of nutmeg, ginger and turmeric

Preparation

  1. Mash the banana and finely grate the carrot

  2. Combine all the rest of the ingredients apart from the blueberries and spices in a separate bowl

  3. Stir through the kefir, vanilla, banana, carrot and enough almond milk to soak the mixture well

  4. Add the blueberries

  5. I think these are perfectly sweet enough with the banana and raisins, but you could add a date or a tbsp maple syrup if you like it sweeter

  6. Leave to ferment in a warm place about 25 degrees (i leave mine in the airing cupboard) for at least 8 hours to allow the flavours to infuse into the oats

  7. This really makes it go super creamy and flavourful!
