Garlicky Tomato Pasta

Ingredients

  • for pasta:
  • 250g fusilli pasta
  • handful cherry tomatoes cut in half
  • 3 cloves of garlic sliced
  • 1 or to taste red chilli finely chopped
  • chilli flakes to taste
  • black pepper and salt to taste
  • 1 tbsp olive oil 1 tsp butter

Preparation

  1. Cook the pasta till al dente in salted water. Reserve a cup of pasta water

  2. Heat butter and oil together, add in the garlic and sauté till golden. Add in the tomatoes, chillies, chilli flakes and black pepper. Cook for 2-3 minutes. Add 1/4 cup pasta water, cook for 30 seconds on high flame. Add in the pasta and more 1/2 cup pasta water. Cook for 3-5 minutes making sure you don’t over cook the pasta. Adjust the seasoning, sprinkle some Parmesan if you wish. Serve hot
