Garlicky Tomato Pasta
Ingredients

- for pasta:
- 250g fusilli pasta
- handful cherry tomatoes cut in half
- 3 cloves of garlic sliced
- 1 or to taste red chilli finely chopped
- chilli flakes to taste
- black pepper and salt to taste
- 1 tbsp olive oil 1 tsp butter
Preparation
Cook the pasta till al dente in salted water. Reserve a cup of pasta water
Heat butter and oil together, add in the garlic and sauté till golden. Add in the tomatoes, chillies, chilli flakes and black pepper. Cook for 2-3 minutes. Add 1/4 cup pasta water, cook for 30 seconds on high flame. Add in the pasta and more 1/2 cup pasta water. Cook for 3-5 minutes making sure you don’t over cook the pasta. Adjust the seasoning, sprinkle some Parmesan if you wish. Serve hot
