Hasselback Potatoes Recipe

Ingredients

  • Small to medium potatoes
  • 2 heaped tsp margarine
  • 2 large garlic cloves, diced
  • 2 tbsp chopped parsley

Preparation

  1. Preheat the oven to 230/240 degrees

  2. Slice the potatoes, leaving about a 5mm space between each slice. Pop in a roasting dish

  3. Add the margarine, parsley and garlic to a bowl and mix together. Take a small spoonful of the garlic margarine and pop on the top of a potato. Flatten the margarine down on top of the potato. Then repeat this step until all the potatoes are covered. Pop in the oven for 40 minutes

  4. Take the potatoes out of the oven and then using a spoon flip the potatoes over and then flip them back so the sliced edge is facing the top again. This covers the potatoes in the margarine mixture again. Pop back in the oven for 20 minutes

  5. After 20 minutes, stab the potatoes with a knife. If they are soft then they are ready to serve. If they are still quite hard, pop back in the oven until soft
