Healthy Zucchini Oats with Banana and Spices

Ingredients

  • 1/2 cup rolled oats
  • 1/3 grated small zucchini or more to preference
  • 1 tbsp ground flax seed
  • 1/2 tsp pumpkin pie spice
  • 1 tsp vanilla
  • 1 mashed ripe banana
  • 1-2 tsp maple syrup (optional)
  • Pinch of salt
  • 1 cup milk alternative (I used soy milk today)

Preparation

  1. Stir all dry ingredients in a small sauce pan.

  2. Add in mashed banana, grated zucchini, milk, and sweetener.

  3. Stir, bring to a simmer and cook for 5 minutes to slightly thicken.

  4. Remove from stove top; it should continue to thicken as it sits and cools.

  5. Serve the oatmeal with extra fruit, nuts, seeds, and other toppings. For example, top with peaches, strawberries, blueberries, cashew yogurt, pumpkin seeds, and banana.

Tips

  1. Adding zucchini to oats provides more antioxidants, phytonutrients, fiber, and makes the oats fluffier and more filling.

  2. Even a small amount of grated zucchini can offer these benefits.
