Bowl of Zoats and Sautéed Apples

Ingredients

  • 1/3 cup rolled oats
  • 1/2 tsp pumpkin pie spice
  • 1 ripe banana (mashed or sliced into coins)
  • 1 tsp maple syrup or sweetener of choice
  • 1 cup unsweetened soy milk
  • pinch of salt

Preparation

  1. If you don’t like the green bits showing, peel your zucchini before grating

  2. In a sauce pan add all your ingredients and stir to combine

  3. Cook and stir to allow to thicken and fluff up for 5 minutes

  4. Remove from heat and salt to taste or adjust sweetness to preference

  5. For an extra treat sauté some diced apples in a pinch pumpkin pie spice or cinnamon, pinch of salt, 2 tbsp water and 2 tsp maple syrup or sugar

  6. Sauté until apple soften and mixture is absorbed into the apples

  7. Then top over oats
