Bowl of Zoats and Sautéed Apples
Ingredients
- 1/3 cup rolled oats
- 1/2 tsp pumpkin pie spice
- 1 ripe banana (mashed or sliced into coins)
- 1 tsp maple syrup or sweetener of choice
- 1 cup unsweetened soy milk
- pinch of salt
Preparation
If you don’t like the green bits showing, peel your zucchini before grating
In a sauce pan add all your ingredients and stir to combine
Cook and stir to allow to thicken and fluff up for 5 minutes
Remove from heat and salt to taste or adjust sweetness to preference
For an extra treat sauté some diced apples in a pinch pumpkin pie spice or cinnamon, pinch of salt, 2 tbsp water and 2 tsp maple syrup or sugar
Sauté until apple soften and mixture is absorbed into the apples
Then top over oats
