Zucchini Oats with Banana and Spices
Ingredients
- 1/3 cup rolled oats
- 1/3 zucchini, grated
- 1 tbsp ground flax seed
- Pinch of cinnamon
- Pinch of cardamom
- Pinch of salt
- 1 small ripe banana, mashed
- 1 cup unsweetened soy milk
Preparation
Add all ingredients to a sauce pan and bring up to medium heat.
Stir to combine and prevent sticking to bottom of the pan.
After mixture has simmered for about 5 minutes, remove from heat and allow to thicken further as you prepare toppings.
Serve in a bowl with your favorite fruit; for me it was berries, kiwi, and coconut.
You are more than welcome to sweeten the mixture with a little maple syrup or 1 soft medjool date if you prefer sweet oatmeal.
