Zucchini Oats with Banana and Spices

Ingredients

  • 1/3 cup rolled oats
  • 1/3 zucchini, grated
  • 1 tbsp ground flax seed
  • Pinch of cinnamon
  • Pinch of cardamom
  • Pinch of salt
  • 1 small ripe banana, mashed
  • 1 cup unsweetened soy milk

Preparation

  1. Add all ingredients to a sauce pan and bring up to medium heat.

  2. Stir to combine and prevent sticking to bottom of the pan.

  3. After mixture has simmered for about 5 minutes, remove from heat and allow to thicken further as you prepare toppings.

  4. Serve in a bowl with your favorite fruit; for me it was berries, kiwi, and coconut.

  5. You are more than welcome to sweeten the mixture with a little maple syrup or 1 soft medjool date if you prefer sweet oatmeal.
