Hummus Recipe: Roasted Courgette & Basil

Ingredients

  • 1 large courgette
  • 2 big handfuls of basil
  • 1 can of chickpeas, drained & peeled
  • 2 tbsp tahini
  • 1 lemon, juiced
  • 1 garlic clove
  • salt, pepper & olive oil

Preparation

  1. Chop up and roast the courgette for 30 mins in the oven at 190•

  2. Peel the chickpeas and garlic and put in the food processor

  3. Add in roasted courgette and all other ingredients

  4. Blitz

  5. Add water to loosen

  6. Season and drizzle with olive oil
