Lemon Cornmeal Pancakes
Ingredients
- lemon cornmeal pancakes
- 1/2 cup corn masa flour
- 2 tbsp maple syrup
- 1 1/4 cup soy milk
- 1/4 tsp salt
- 1/4 tsp turmeric
- 1/2 tsp cinnamon
- 1 tsp baking powder
- juice of half a lemon + lemon zest ?
Preparation
Whisk dry ingredients together in a medium bowl
Add in liquids and gently mix (do not over mix batter) to combine and create a batter
Using a 1/4 measuring cup, add a scoop of batter to create a round pancake shape on a preheated griddle (if concerned with sticking feel free to grease your surface)
Allow pancake to cook for about 2-3 minutes or until bottom is golden then flip and cook for about 2-3 minutes on the other side
Repeat for the rest of batter
Enjoy pancakes (makes 8) with fruit, syrup or nut butter
