Lemon Cornmeal Pancakes

Ingredients

  • lemon cornmeal pancakes
  • 1/2 cup corn masa flour
  • 2 tbsp maple syrup
  • 1 1/4 cup soy milk
  • 1/4 tsp salt
  • 1/4 tsp turmeric
  • 1/2 tsp cinnamon
  • 1 tsp baking powder
  • juice of half a lemon + lemon zest ?

Preparation

  1. Whisk dry ingredients together in a medium bowl

  2. Add in liquids and gently mix (do not over mix batter) to combine and create a batter

  3. Using a 1/4 measuring cup, add a scoop of batter to create a round pancake shape on a preheated griddle (if concerned with sticking feel free to grease your surface)

  4. Allow pancake to cook for about 2-3 minutes or until bottom is golden then flip and cook for about 2-3 minutes on the other side

  5. Repeat for the rest of batter

  6. Enjoy pancakes (makes 8) with fruit, syrup or nut butter
