Almond Oat Pancakes

Ingredients

  • almond oat pancakes
  • 1/2 cup almond flour
  • 3/4 cup gluten free oat flour or gluten free all purpose flour
  • 2 tbsp ground flaxseed
  • 4 tbsp apple sauce
  • pinch of salt
  • 1 tbsp sugar
  • 1/2 tsp cinnamon
  • 1 tsp baking powder
  • 3/4 cup soy milk

Preparation

  1. Preheat your griddle to a low medium heat

  2. In a bowl combine flax seeds and apple sauce

  3. Mix together well and add in cinnamon, sugar, salt and baking powder

  4. Whisk in milk until all combined

  5. Add in almond flour and oat flour and mix well until a batter forms (should be slightly thick)

  6. If necessary, grease pan or griddle and add 1/4 cup batter to the pan

  7. Allow pancake to cook on one side for 4 minutes and then flip and cook for another 4 minutes or until pancake is cooked through

  8. Repeat with remaining batter

  9. Should make 6 pancakes
