Ingredients

  • 2.5kg beef short ribs, cut into 4cm squares
  • 200 mls @bullseyebbq smokey chipotle sauce
  • 200 mls Mrs Balls chutney from @ocadouk
  • 500 mls water
  • 1 tbsp paprika
  • 4 tbsp apple cider vinegar
  • 5 fat cloves garlic, peeled

Preparation

  1. Preheat oven to 160 degrees

  2. Put all the above ingredients in a casserole dish and mix until well combined

  3. Cover the surface of the ribs with a layer of baking paper, tucking in the sides, then put the lid on

  4. Place in the oven and cook for 4hrs

  5. Remove from oven and let cool completely before refrigerating over night (flavours get even more time to develop and the fat really does need to be banished ?‍♀️)

  6. Remove all the fat that will have hardened on the surface

  7. Re heat at 180 degrees for 30/40 minutes

  8. Garnish with spring onion & chopped chives

  9. Serve with rice
