"No Tuna" Salad


  • 2 cups almonds or cashews, soaked 2-10 hours (depends on how much time you have)
  • 1/2 cup coarsely chopped onion
  • 1 1/2 cups finely minced celery
  • 1/2 cup minced parsley
  • 1/4 cup minced shallot or scallion
  • 1/4 cup lemon juice
  • 2 teaspoons kelp powder and/or dulse
  • 2-3 sheets of dried seaweed (you can buy in Asian aisle at grocery store)
  • sea salt to taste


  1. Soak almonds 8-12 hours, drain, rinse and drain again

  2. Place almonds and onions through the heavy-duty juicer (or just blend and drain liquid out) ??Place mixture in a large bowl, add celery, parsley, shallots, lemon juice, kelp, dulse or sea salt and stir thoroughly
