Noodle Biran
Ingredients
- 3 - 4 eggs hard boiled
- 3 - 4 packets of ramen noodles
- 3 tbsp oil
- 1 large or 2 small onions, diced
- 1 tsp salt
- 2 tsp mixed curry powder
- boiling water (as needed)_
- 2 - 3 green chillies finely sliced
- coriander chopped
Preparation
Hard boil the eggs in a pan of water, peel and leave to one side till needed
In a large frying pan/skillet add 3 tbsp of oil, once heated add in the diced onion(s), add 1 tsp salt and saute until the onions are soft and translucent
Next add 2 tsp mixed curry powder and saute for 2 mins
Smash the ramen noodles in the packet using a rolling pin, add the noodles directly to the pan along with 2 - 3 flavour sachets (don't add them all as the noodles will become too salty), mix well and top up with boiling water until the noodles are completely submerged
Allow to cook over a high heat until the noodles have completely absorbed all the liquid and are cooked through
Cut up the boiled eggs and add to the pan along with sliced green chillies + chopped coriander, stir through and serve
