Our "Beefy" Veggie Lettuce Wraps with Our Cilantro Ranch Sauce

Ingredients

  • ground (not) beef
  • 1 cup of green lentils
  • drizzle of olive oil
  • 2 cloves of garlic
  • 3/4 cup of white onion
  • 2 tsp of cumin
  • 1 tsp of pink himalayan salt
  • 1 tsp of paprika
  • 1/2 tsp of black pepper
  • 1/2 tsp of oregano
  • sprinkle of cayenne
  • sprinkle of chilli powder
  • for the cilantro ranch
  • 1/2 cup of raw cashew
  • 1/2 cup of filtered water
  • 1 tbs of sesame oil
  • 1/2 + 1/8 tsp of pink himalayan salt
  • 1/8 tsp of fresh garlic
  • 4 tsp of apple cider vinegar
  • 2 tsp of cilantro
  • 1 tsp of nutritional yeast flakes
  • for wraps
  • green lettuce leafs
  • sliced red bell pepper
  • julienne peeled carrots
  • sliced purple cabbage
  • grape tomatoes

Preparation

  1. Once lentils are ready drain well and set aside

  2. In a medium sized pan on medium heat add olive oil and garlic

  3. Stir until fragrant and add lentils

  4. Add remaining ingredients for ground (not) beef

  5. Stir well for a few minutes and set aside

  6. Combine all ingredients for sauce into a blender or food processor

  7. Blend until smooth and set aside

  8. Place leafs on serving dish of choice and top with ground (not) beef followed by veggies

  9. Top with sauce and garnish with fresh squeezed lime juice and chopped cilantro
