Potato and Lentil Soup

Ingredients

  • 2 tbs of olive oil
  • 3 cloves of garlic
  • 1 yellow onion chopped
  • 2 carrots chopped
  • 2 celery stalks chopped
  • 1 large white sweet potato chopped (or regular sweet potato is fine)
  • 7 cups of filtered water or vegetable stock
  • 1 1/2 cups of green lentils
  • 2 bay leaves
  • 1 tomato chopped
  • 1 cup chopped kale ribs removed
  • 1 1/2 tsp of salt
  • 1 tsp black pepper
  • 1/4 tsp cumin
  • 1/8 tsp garlic powder
  • sprinkle of paprika
  • sprinkle of cayenne

Preparation

  1. In large pot on medium heat, add olive oil, then add garlic and onion stir and cook til fragrant

  2. Add celery and carrots, stir and cook for about five minutes than add potato

  3. Right after the potato is added pour in water and add lentils and bay leafs

  4. Cover pot and let simmer for 40 to 45 minutes stirring occasionally

  5. Remove lid add tomato, kale, and seasoning, lower heat cook for 5 to 10 more minutes

  6. Enjoy?
