Puff Pastry Vegan Sausage Rolls

Ingredients

  • 1 can of chickpeas
  • 3 tablespoon of olive oil
  • 1/3 cup of cashew milk
  • 1/3 cup of peeled tomatoes
  • 4 tablespoons almond meal crumbs
  • 150 grams of raw cashews
  • 1 teaspoon of salt
  • 1/2 teaspoon praprika
  • 1 tablespoon of parsley
  • 1/2 cup shredded carrots
  • 2/3 cup shredded zucchini
  • 1/2 medium onion
  • sesame seeds to garnish

Preparation

  1. In a fry pan add 1 tablespoon of olive oil and sauté crushed garlic, shredded carrot, zucchini and diced onions

  2. Add salt and pepper to taste

  3. Cook for five minutes and add your peeled tomatoes

  4. Cook for 10 minutes and set aside to cool

  5. In a blender add your chickpeas, raw cashews, parsley, 2 tablespoon of olive oil, salt, paprika, water, almond meal and cooled mixture

  6. If mixture appears a bit dry add a touch of water

  7. Layout your puff pastry sheet and cut it in half

  8. Lay the mixture on your pastry and roll then cut in 4 pieces

  9. Brush with olive oil and sprinkle some sesame seeds

  10. Cook for 20 minutes at 180 or until golden brown
