Pumpkin Spice Oatmeal with Fig Topping

Ingredients

  • 2 packets Chia Crunch or just over 1/2 cup oats
  • 1/4 cup pumpkin purée
  • 1/2 cup water
  • 1/2 cup almond milk
  • 1/2 tsp vanilla extract or powder
  • 1/2 tsp pumpkin pie spice
  • 1/2 tsp turmeric
  • A dash of cinnamon

Toppings

  • vanilla almond yogurt
  • figs
  • rose petals
  • pistachios
  • bee pollen

Preparation

  1. Combine all base ingredients in a pot and cook over medium heat until thickened and creamy, about 5-10 minutes

  2. Once cooked, remove from heat and let cool slightly

  3. Top with yogurt, fresh figs, rose petals, pistachios, and bee pollen

  4. Serve immediately and enjoy
