Pumpkin Strudel Protein Skillet

Ingredients

  • recipe:
  • 50g plain flour (you can also sub for oats)
  • 30g ( 1 scoop) of vanilla soy isolate protein powder
  • 5g chia seeds
  • 100g pumpkin purée
  • 150ml unsweetened almond milk, a tonne of cinnamon
  • 1/4tsp baking powder and a squeeze of a lemon
  • 30g pats
  • 20g vegan butter (can sub for coconut oil)
  • 10g sweetener
  • some cinnamon

Preparation

  1. Mix the base and topping mixtures separately. place the base mixture in a single serve skillet or oven proof bowl. Top with the topping mixture. Place in the oven for 20-25mins on 180c! Take out of the oven and drizzle with butterscotch syrup
