Pumpkin Strudel Protein Skillet
Ingredients

- 50g plain flour (you can also sub for oats)
- 30g ( 1 scoop) of vanilla soy isolate protein powder
- 5g chia seeds
- 100g pumpkin purée
- 150ml unsweetened almond milk, a tonne of cinnamon
- 1/4tsp baking powder and a squeeze of a lemon
- 30g pats
- 20g vegan butter (can sub for coconut oil)
- 10g sweetener
- some cinnamon
Preparation
Mix the base and topping mixtures separately. place the base mixture in a single serve skillet or oven proof bowl. Top with the topping mixture. Place in the oven for 20-25mins on 180c! Take out of the oven and drizzle with butterscotch syrup
