Salad Recipe

Ingredients

  • 3-4 cups of mixed greens
  • 2 persian cucumbers
  • 1 zucchini or summer squash
  • 1 cup cherry tomatoes
  • 1-2 avocados
  • 1/2 red onion
  • cilantro and parsley to taste
  • 1 bag of @fabalishfoods falafel
  • spicy tzatziki:
  • 1 cup vegan yogurt (i used coconut)
  • 1/4 cup grated cucumber (i didn’t use it this time because i ran out whoops)
  • 1 tsp paprika
  • 1 tsp cayenne
  • 1 tbsp minced garlic
  • 2 tbsp dried dill
  • 1 tbsp lemon juice
  • 2 tbsp evoo

Preparation

  1. Pop falafel in air fryer and air fry at 375° f for 10 minutes and then rotate, air fry for another 10-15 min

  2. Dice vegetables, prep herbs and grate cucumber for sauce

  3. Add red onions and zucchini in raw or sauté for 7 minutes with a little evoo and salt (love to sauté mine)

  4. Add all your ingredients to a large bowl and add falafel on top when ready

  5. Add all sauce ingredients in a bowl and stir to combine

  6. Immediately refrigerate
