Salad Recipe
Ingredients
- 3-4 cups of mixed greens
- 2 persian cucumbers
- 1 zucchini or summer squash
- 1 cup cherry tomatoes
- 1-2 avocados
- 1/2 red onion
- cilantro and parsley to taste
- 1 bag of @fabalishfoods falafel
- spicy tzatziki:
- 1 cup vegan yogurt (i used coconut)
- 1/4 cup grated cucumber (i didn’t use it this time because i ran out whoops)
- 1 tsp paprika
- 1 tsp cayenne
- 1 tbsp minced garlic
- 2 tbsp dried dill
- 1 tbsp lemon juice
- 2 tbsp evoo
Preparation
Pop falafel in air fryer and air fry at 375° f for 10 minutes and then rotate, air fry for another 10-15 min
Dice vegetables, prep herbs and grate cucumber for sauce
Add red onions and zucchini in raw or sauté for 7 minutes with a little evoo and salt (love to sauté mine)
Add all your ingredients to a large bowl and add falafel on top when ready
Add all sauce ingredients in a bowl and stir to combine
Immediately refrigerate
