Savoury French Toasts with Eggs and Spices

Ingredients

  • 6-day old spelt sourdough bread (2 slices per egg)
  • 1 egg
  • Pinch of chilli
  • Pinch of salt
  • Pinch of pepper
  • Olive oil for cooking
  • Hemp seeds (optional)
  • Mustard greens and other greens (optional)

Preparation

  1. Whisk the egg with a pinch of chilli, salt, and pepper.

  2. Let the bread slices sit in the egg mixture for a few minutes to soften.

  3. Turn the slices and rub them until all the egg is absorbed.

  4. Cook in a bit of olive oil until done.
