Simple Lentil Vegetable Soup


  • 9 cloves of garlic, minced
  • 1/4 cup of red split peas
  • half a bunch of kale
  • 2 medium carrots, chopped
  • 1 small red onion, diced
  • 1 medium sweet potato, chopped
  • 2 1/2 cups water


  1. Sauté onions and garlic in a nonstick sauce pan until translucent and fragrant

  2. Add sweet potato and kale long enough for kale to turn a bright green color

  3. Add in your lentils, carrots and water

  4. Mix well and allow to bring to a boil before lowering heat and covering

  5. Allow to continue cooking until vegetables are tender and lentils have fully cooked
