Simple Lentil Vegetable Soup
Ingredients
- 9 cloves of garlic, minced
- 1/4 cup of red split peas
- half a bunch of kale
- 2 medium carrots, chopped
- 1 small red onion, diced
- 1 medium sweet potato, chopped
- 2 1/2 cups water
Preparation
Sauté onions and garlic in a nonstick sauce pan until translucent and fragrant
Add sweet potato and kale long enough for kale to turn a bright green color
Add in your lentils, carrots and water
Mix well and allow to bring to a boil before lowering heat and covering
Allow to continue cooking until vegetables are tender and lentils have fully cooked
