Smokey Chickpea Cheeze Sauce
Ingredients
- 1 1/2 cups cooked chickpeas
- 1 cup unsweetened cashew, almond, or oat milk (for a nut free version)
- 1 t lemon juice
- 1/2 cup nutritional yeast
- 2 large cloves garlic
- 1 t black salt, or sea salt
- 1 t smoked paprika
Preparation
Put a large pot of water on to boil for pasta and broccoli
While water is boiling for pasta add all ingredients for chickpea cheese sauce in blender, and blend on high speed until completely smooth. -Cook pasta of choice according to package instructions, adding broccoli for the last 3-5 minutes of cooking until it's bright green and crisp-tender. Reserve 1 cup of pasta cooking water. -Drain pasta and broccoli and return to pot. Add sauce and mix, thinning with reserved pasta water until it's your perfect consistency. Serve to hungry people!! **This recipes makes a little more than 2 cups of sauce. This was the perfect amount to mix with 1 lb of cooked gluten free pasta and the florets from a large head of broccoli! I used about 1/2 cup pasta cooking water to thin as I mixed everything together. ? If you are not eating this immediately, thin again with additional water before reheating
