Spicy + Cheesy Tuna Boats

Ingredients

  • zucchini
  • 3 cans of @portofinotuna (4.5oz each)
  • mix with 1/4 cup mayo
  • 1/4 cup relish
  • 2 tbsp sriracha
  • 1/4 cup chopped red onion
  • 2 tbsp chopped jalapeno
  • and 1/2 tsp salt

Preparation

  1. Cut zucchini in half and scoop out middles. Bake at 400 for 15 min. meanwhile, in a large bowl, add 3 cans of @portofinotuna (4.5oz each), mix with 1/4 cup mayo, 1/4 cup relish, 2 tbsp sriracha,  1/4 cup chopped red onion, 2 tbsp chopped jalapeno, and 1/2 tsp salt. Stir to combine. Add into zucchinis and top with cheese. I used about 1 cup cheddar. Bake for additional 5 minutes
