Spicy Chorizo Stuffed Peppers


  • 1⃣ Dice or shred 1 bell pepper, 1 onion, 1 jalapeño and 2 garlic cloves. Heat in a large skillet over medium-high heat
  • 2⃣ Add 18 oz chorizo (either the soft kind or the hard kind, diced). Cook the chorizo with the veggies until all is soft and cooked through
  • 3⃣ Transfer into bell pepper halves, either raw (my preference) or roasted until soft. Top with more jalapeños, avocado and cilantro if desired
