Spinach Pesto Courgetti

Ingredients

  • 1-spiralize 2 medium courgettes per person (roughly)
  • 2- in a nutribullet add 2 small cooked beetroot (all supermarkets sell them vac-packed)
  • 3- add a generous handful of cashew nuts
  • 4- add a small piece of ginger, roughly 1/2inch
  • 5- add Himalayan salt about 1/2tspn
  • 6- add 1/4 cup 15min mom almond milk
  • 7- add 1/2 tspn garlic
  • 8- I added a handful of raw spinach but it’s optional
  • 9- finally 1 green chilly

Preparation

  1. Blend all the above ingredients in a @nutribulletuk

  2. Spiralize 2 medium sized courgettes

  3. Heat the courgettes in a pan on high heat turning regularly as not to burn (no oil required)

  4. Mins later add the beetroot sauce to the courgetti

  5. Serve hot
