Sugar-Free Sunny-Side Up Waffles
Ingredients
- 100g butter
- 3 tablespoons Erythritol or Xylitol
- 3 eggs
- 200g whole grain spelt flour
- 80ml almond milk
- 1/2 teaspoon baking powder
Topping
- 200g Greek yogurt
- 3 tablespoons Erythritol or Xylitol
- 5 canned peach halves
Preparation
Mix butter and Erythritol or Xylitol well.
Add eggs and stir in.
Alternately stir in flour and almond milk into the dough.
Bake the waffles in a greased waffle iron.
Mix yogurt with Erythritol or Xylitol.
Place a large dollop of the mixture on the waffles as egg white and distribute evenly.
Set a peach half in the center of each waffle.
