Sugar-Free Sunny-Side Up Waffles

Ingredients

  • 100g butter
  • 3 tablespoons Erythritol or Xylitol
  • 3 eggs
  • 200g whole grain spelt flour
  • 80ml almond milk
  • 1/2 teaspoon baking powder

Topping

  • 200g Greek yogurt
  • 3 tablespoons Erythritol or Xylitol
  • 5 canned peach halves

Preparation

  1. Mix butter and Erythritol or Xylitol well.

  2. Add eggs and stir in.

  3. Alternately stir in flour and almond milk into the dough.

  4. Bake the waffles in a greased waffle iron.

  5. Mix yogurt with Erythritol or Xylitol.

  6. Place a large dollop of the mixture on the waffles as egg white and distribute evenly.

  7. Set a peach half in the center of each waffle.
