Sweet Potato and Kale Stew with Grains and Tomatoes
Ingredients
- 2 small sweet potatoes, peeled and cubed
- Water (approximately 500ml)
- 1 vegetable stock cube
- Grains (according to package instructions)
- Oat cream (approximately 400-500ml)
- Frozen kale (a generous amount)
- 1 tsp sambal oelek
- 2 crushed garlic cloves
- 1 tbsp soy sauce
- 2 tbsp peanut butter
- Salt and pepper
- Crushed tomatoes
- 1 can of boiled chickpeas
- Tofu or fried soy sausages (optional)
- Extra veggies of choice
Preparation
Bring water to a boil (about 500ml) and add 1 vegetable stock cube.
Add the peeled and cubed sweet potatoes to the boiling water. The water should just about cover the sweet potatoes.
Boil the grains according to the instructions on the package.
Once the sweet potatoes have begun to soften, pour in oat cream (approximately 400-500ml), a generous amount of frozen kale, 1 tsp sambal oelek, 2 crushed garlic cloves, 1 tbsp soy sauce, 2 tbsp peanut butter, salt, and pepper.
Add some crushed tomatoes and a can of boiled chickpeas. Cover with a lid and let it simmer for 10 minutes.
Taste-test and adjust the seasoning as needed. Optionally, add tofu or fried soy sausages (cut into pieces).
Serve the stew with the cooked grains and additional veggies of your choice.
