Vegan Nourish Bowl with Bbq Tofu and Veggies

Ingredients

  • Tofu
  • BBQ sauce (store-bought)
  • Bulgur wheat
  • Avocado
  • Broccoli
  • Tomatoes
  • Carrot
  • Vegan mayonnaise
  • Cucumber
  • Lettuce

Preparation

  1. Preheat oven to 400°F (200°C)

  2. Press tofu to remove excess water and cut into cubes

  3. Toss tofu cubes with BBQ sauce and spread on a baking sheet

  4. Bake for 20-25 minutes until golden and crispy, flipping halfway

  5. Prepare bulgur wheat according to package instructions

  6. Chop avocado, broccoli, tomatoes, and cucumber into bite-sized pieces

  7. Grate the carrot

  8. Mix grated carrot with vegan mayonnaise in a small bowl

  9. Place a generous amount of lettuce at the bottom of a bowl

  10. Top with bulgur wheat, baked tofu, avocado, broccoli, tomatoes, cucumber, and the carrot mixture
