Vegan Red Velvet Cake
Ingredients
- 1 1/4 cup apple purée;
- 3 cups gluten-free flour;
- 1/3 cup coconut flour;
- 1 1/4 cup maple syrup; ?
- 1/4 cup coconut oil;
- 6 tbsp raw cacao powder;
- pinch of salt;
- for the filling:
- 3 1/2 oz coconut cream;
- 1 tbsp almond butter;
- 2 tbsp maple syrup;
- 1 tbsp raw cacao powder;
- cream cheese frosting:
- 2 tbsp coconut oil;
- 4 tbsp natural zero-calorie sweetener like erythritol and monk fruit;
- 2 tsp vanilla extract;
Preparation
In a food processor put the beets and blend until smooth
Add the purée to a mixing bowl with all the remaining ingredients for the cake
Grease two round cake pans with coconut oil and bake at 375F for about 20 minutes or until the toothpick comes out clean
For the filling, simply mix all the ingredients until smooth and put it inside the refrigerator to thicken
For the cream cheese frosting, blend all ingredients until smooth
When the cake is ready and chilled, pour the filling on top of each side and leave it in the refrigerator to set before coating with the cream cheese frosting
