Veggies and Sweet Tamari Dressing

Ingredients

  • 1 pack soba noddles
  • 1  bunch broccoli, trimmed and cut into florets
  • 1  cup chopped mushrooms
  • 100 g baby corn
  • 1 small red capsicum, chopped
  • buckwheat sprouts for serving
  • fresh cilantro for serving
  • for the dressing:
  • 1/2 cup fresh orange juice (from about 1 large orange)
  • 3 tbsp tamari
  • 1 tbsp maple syrup
  • 1 tbsp rice vinegar

Preparation

  1. To make the dressing, combine all the ingredients in a glass jar with a lid, give it a good shake

  2. Set aside

  3. Steam vegetables for about 6 minutes

  4. Cook noodles according to the package directions

  5. In a large bowl combine cooked noodles with veggies, spoon over the dressing

  6. Garnish with cilantro and buckwheat sprouts

  7. Serve immediately and enjoy!
