Za'atar Pie with Sesame Filling
Ingredients
Dough
- 2 1/2 cups flour
- 1 tablespoon instant yeast
- 1 teaspoon salt
- 1 teaspoon baking powder
- 2 tablespoons sugar
- 3 tablespoons corn oil
- 1 cup warm milk
Filling
- 3/4 cup za'atar with sesame
- 1/2 cup olive oil
Glaze
- 1 egg yolk
- 1/4 teaspoon vinegar
- 1 teaspoon water or milk
Preparation
In a mixer bowl, place 2 cups flour, yeast, salt, baking powder, and sugar, attach the dough hook and run for a few seconds to mix the ingredients, then add the oil and milk and continue running to form a smooth dough, adding more flour as needed, knead on low speed for 6 minutes, cover the dough and let it rise in a warm place until doubled in size.
Divide the dough into 4 pieces, shape each into a ball, let them rest for a few minutes, then use a rolling pin to roll each ball into a 9-inch disk.
For the filling, in a plate, place the za'atar with sesame, mix to create a liquid mixture.
Prepare a shallow tray, place one dough circle and spread one-third of the za'atar mixture over it, add a second circle and spread another third, then add the third circle with the remaining za'atar, and finally place the fourth circle.
Using a knife, cut triangles from the center of the dough without reaching the edges.
Take the tip of each triangle and roll the dough into a spiral shape, repeat with the remaining triangles.
Using scissors or a knife, trim the edges of the dough and use the scraps to decorate the center of the pie.
Let the pie rest for a few minutes to rise, then brush it with the glaze mixture.
Preheat the oven to 180°C, place on the middle rack, and bake until golden brown.
