Sesame Coated Bread Loaf

Ingredients

  • 1 cup warm milk
  • 1 tablespoon instant yeast
  • 1 teaspoon sugar
  • 1 teaspoon baking powder
  • 3 1/4 cups flour
  • 1 tablespoon fine semolina
  • 1 teaspoon salt
  • 1/2 cup corn oil

For coating

  • 1/2 cup date molasses or black honey
  • 3 tablespoons water
  • 2 cups roasted sesame

Preparation

  1. In a mixer bowl, place 3 cups of flour and add yeast, sugar, baking powder, semolina, and salt. Attach the dough hook and mix for a few seconds. Then add milk and oil, and run on low speed until dough forms. Gradually add more flour to make a smooth dough.

  2. Place the dough in a greased bowl, cover it, and let it rise until doubled in size.

  3. For the coating, in a plate, mix date molasses and water until dissolved.

  4. Place sesame seeds in a wide plate.

  5. Cut the dough into desired bread sizes and shape each into a rope-like form.

  6. Take two ropes of dough, twist them together, and secure the ends.

  7. Dip the bread in the molasses mixture to coat, then immediately transfer to sesame seeds and coat all sides gently.

  8. Place the breads on a baking tray, leaving space between them.

  9. Let the breads rise in a warm place until doubled in size, but do not overproof.

  10. Set the oven rack to the middle position and preheat the oven to 180°C.

  11. Bake for about 20 minutes until golden brown. The baking time may vary depending on the size of the bread.

Tips

  1. To keep the bread soft and light, cover it lightly with a cotton kitchen towel immediately after baking for a few minutes to retain steam, but do not cover it tightly.
