Samoon Bread with Cheese Filling

Ingredients

Dough

  • 1 cup warm milk
  • 1 tablespoon sugar
  • 1 tablespoon instant yeast
  • 1/4 cup corn oil
  • 1 tablespoon vinegar
  • 2 1/2 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons milk powder

For glazing

  • 1 egg yolk
  • 1/2 teaspoon sesame

Filling

  • 1 1/2 cups feta cheese
  • 1 egg white
  • 1 cup chopped parsley

For decoration

  • sesame
  • nigella seeds

Preparation

  1. In a mixer bowl, place the milk, sugar, and yeast, and leave it for a few minutes to activate the yeast.

  2. Add the oil, vinegar, half the flour amount, baking powder, salt, and milk powder. Attach the dough hook and run on low speed to form a dough, adding more flour as needed. Cover and let it rise until doubled in size.

  3. Divide the dough into 8 balls. Cover and let them rise until doubled in size.

  4. For the filling: In a bowl, combine the cheese, parsley, and egg white; mix well.

  5. Prepare a large baking tray and line it with parchment paper.

  6. Take one dough ball, flatten it into a thick disk, place some filling in the center, and shape it back into a ball. Place on the tray. Cover and let rise until doubled in size.

  7. Using a wide wooden spoon, create an indentation in the center of each samoon.

  8. Brush the samoon with egg yolk.

  9. Place some of the filling mixture into the indentation and sprinkle with sesame.

  10. Preheat the oven to 180°C and bake for 20 minutes or until golden brown.
