Sesame Bread with Date Syrup Coating

Ingredients

  • 1 cup warm milk
  • 1 tablespoon instant yeast
  • 1 teaspoon sugar
  • 1 teaspoon baking powder
  • 3 cups flour
  • 1 tablespoon fine semolina
  • 1 teaspoon salt
  • 1/2 cup corn oil

Coating

  • 1/2 cup date syrup or black honey
  • 3 tablespoons water
  • 2 cups roasted sesame

Preparation

  1. In the mixer bowl, put 3 cups flour, add yeast, sugar, baking powder, semolina, salt, attach dough hook, run for a few seconds to mix, then add milk and oil and run on low speed until dough forms, add more flour gradually until smooth and homogeneous.

  2. Place dough in greased bowl, cover, and let rise until doubled in size.

  3. For coating, in a plate, put date syrup and water, stir to dissolve.

  4. Put sesame in a wide plate.

  5. Cut dough according to desired loaf size and shape into ropes.

  6. Take two ropes, twist them together, ensuring ends are secured.

  7. Dip the loaf in the black honey to coat, then immediately transfer to sesame and turn gently to coat all sides well.

  8. Place loaves on tray, leaving space between them.

  9. Let rise in warm place until doubled in size, but do not leave too long; bake when they start to rise to avoid over-fermenting.

  10. Set oven rack to middle position and preheat oven to 180°C.

  11. Bake for about 20 minutes until golden brown; baking time depends on size of the loaf.

Tips

  1. To keep the bread soft and light, cover it lightly with a cotton towel for a few minutes after baking to retain steam, but do not cover tightly.
