Zoodles in Creamy Avocado Coriander Pesto
Ingredients
- 10-15 walnuts (any nuts your choice)
- 2 small pods of garlic
- Big squirt of lime
- A big handful coriander
- 1 whole ripe avo
- Splash of extra virg olive oil (optional)
- Himalayan salt
Preparation
Blend until not very smooth.
Taste , adjust seasoning .
I have finally blended a few slices of jalapeño for that punch.
Pair it with zoodles ( I have tossed the zoodles on fire briefly) and cherry tomatoes.
