Healthy Vegan Caesar Salad
Ingredients
- red cos lettuce
- vine ripened tomato
- avocado
- dark rye sourdough croutons
- cucumber
- red spring onion
- raw garlic
- chicken style pieces
- new potatoes
- crispy 'bacon'
Dressing
- Sacla' caesar dressing
- lemon juice
- black pepper
Preparation
Wash and chop the lettuce, tomato, avocado, cucumber, and spring onion.
Mince the raw garlic if using.
Cook the chicken style pieces and crispy bacon according to package instructions.
Boil or cook the new potatoes until tender.
Combine all chopped vegetables, cooked proteins, and potatoes in a large bowl.
Drizzle with the dressing, lemon juice, and black pepper, then toss to mix evenly.

This is a vegan version of Caesar salad with high protein content.
