Heart-Healthy Dark Chocolate Beet Mousse
Ingredients
- 350g soft tofu
- 1/2 cup beet juice
- 60 grams melted dark chocolate (optional, helps the mousse firm up)
- Orange zest
- Splash of orange juice
- Sweetener of choice as needed (e.g., stevia, honey)
- Chopped chocolate for serving
Preparation
In a blender, combine the soft tofu, beet juice, melted dark chocolate (if using), orange zest, and a splash of orange juice.
Blend until the mixture is smooth and creamy.
Taste and add sweetener of choice, adjusting the amount to your preference.
Blend again to incorporate the sweetener.
Divide the mixture into serving glasses or bowls.
Refrigerate the mousse for a few hours or until set.
Before serving, top with chopped chocolate for added texture and flavor.
