Chorizo Baked Beans

Ingredients

  • Fry off 1 onion
  • 100g chopped chorizo
  • 100g chopped pancetta or smoky bacon in 1 tbsp of olive oil until the onion is cooked and the lovey red oil comes out of the chorizo. Then add a tin of rinsed cannellini beans (or any white bean) about 200ml of passata, 1 tsp of smoked sweet paprika, 1 tbsp of maple syrup and 1 tsp of balsamic

Preparation

  1. Season, bring to the boil then pop in the oven, uncovered for 30 mins at 200c

  2. Serve with a fried egg

  3. Serve 2 hungry peeps for brunch
