Ginger and Cinnamon Cookies

Ingredients

  • 3 cups flour
  • 3 tsp ground ginger
  • 3 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/2 tsp bicarbonate of soda
  • 1/4 tsp baking powder
  • 1/2 cup olive oil
  • 1/2 cup honey OR blackstrap molasses
  • 1 egg
  • 1/2 cup brown sugar
  • 1 tsp vanilla
  • 2 tsp water
  • 1 tsp orange zest

Preparation

  1. Preheat the oven to 180C ?Put the flour, ginger, cinnamon, salt, bicarbonate for soda and baking powder into a large bowl. Mix to combine. ?In another bowl whisk together the olive oil, honey OR molasses, egg, brown sugar, vanilla, orange zest and water ?Pour the the wet mix into the dry mix and using your hands combine well. If using molasses the mix will be quite dense so you can add another tbsp water to make it easier to combine ?Press well into your silicone moulds and bake for 10 minutes ?Let them cool for a couple of minutes, turn them out and bake for another minute or two, depending on how thick they are. ?Put on a cooling rack to cool completely

  2. NOTE: using blackstrap molasses will give you a less sweet, more spicy cookie with a more intense flavour
