Vegan Choc Chip Cookies

Ingredients

  • 1/2 cup coconut oil (solid not melted)
  • 2 tsp vanilla extract • 1/4 cup full fat coconut milk in a can
  • 1 banana, mashed (the riper the better)
  • 1 1/4 cups coconut sugar
  • 2 1/4 cups all purpose gf flour
  • 1 tsp baking soda • 1/2 tsp sea salt
  • 2 cups vegan chocolate chips

Preparation

  1. Preheat oven to 190°C (375°F). Line a baking tray with baking paper OR @biomestores have reusable silicon sheets!! I tried them for the first time today & they worked SO WELL. Highly recommend ? see my stories for more info (they're made by @agreenaworld)

  2. Mix together wet ingredients first, then dry ingredients in separate bowls. > Combine together & mix until well combined (I used my hands to mix it/knead it, which worked really well), then fold in the chocolate chips!! > Once dough is ready, pop it in freezer to chill for 10-20 mins, then place the cookies on cookie sheet (making sure to leave space between them, as they expand in the oven), & bake them for 10-20 mins or until they turn a light golden brown on top. > Once done, remove from oven and let cool on tray for 10 mins. Then eat up!! The challenge is not to eat them all in one go, haha ? Enjoy
