V/gf Nut Free Banana Fudge Brownies

Ingredients

  • 2 ripe mashed bananas
  • 1/4 cup vegan butter or coconut oil
  • 2 tbsp tahini (or any nut butter)
  • 2 tbsp extra virgin olive oil
  • 2 tbsp maple syrup
  • 1/2 cup cassava flour (can swap with oat or almond)
  • 1/2 cup raw cacao powder
  • 3 tbsp flax meal
  • 1/3 cup vegan chocolate chips
  • 1 tsp baking powder
  • pink himalayan sea salt

Preparation

  1. Mix banana with butter, tahini, oil and maple until creamy

  2. Add the dry ingredients and stir well until fully mixed in

  3. Fold in chocolate chips

  4. Spread into a lightly oiled 8x8 glass dish

  5. Sprinkle with sea salt and extra chocolate chips and bake at 350 for 25-30 minutes
